Baked Beans my way!

Today I thought I'd like to pass on my "Baked Beans" recipe.
Baking time 1 1/2 hour

You'll need for two people

1 cup dry beans, garbanzo, kidney, navy or any bean you like.
1 large sweet onion finely chopped
1 19oz can crushed tomatoes
1 tbs chili
1 tbs brown sugar
1/2 tsp salt
2 tbs oil (approx)
4 slices bacon (preferable maple smoked)

Cover beans with plenty of water and soak overnight.
In the morning drain the beans, cover with fresh water/salt,
cook for an hour until done but not cracked.
Turn off heat and let stand till preparation time.

Fry onion in the oil till golden, add the
drained cooked beans, tomatoes, chili, and sugar.
Place in an oven proof casserole dish cover and bake at 350 at least for an hour.
In the meantime fry the bacon until crisp, place on top
of beans after they have baked for an hour,
than bake an additional half hour uncovered.

For desert make sure to have an dish of fresh
pineapple with blackberries (whipped topping).
The tartness hits the spot after the beans.

Even though by draining the beans a lot of enzymes
are removed, I suggest you take "Beano".
You will thank me for that tip!!
